We’re back with some kick butt onion gravy that would make herbivores AND carnivores drool. This stuff is the bee’s knees, guys. Granted, I’m not a huge fan of meat based gravy (actually just saying that makes my upper lip curl), but even The Chef, and our friend who’s a meat loving army dude, can’t get enough. They prefer it over “regular” gravy.
It’s legit.
With the holidays coming up, we thought it would be a perfect time to share a tasty alternative. You never know if cousin Terry will show up claiming to be vegan on the day based around poultry, but there is hope! It’s not too hard either. But run to the grocery store to grab some vegetable base if thats not a regularly stocked item.
Grab two onions and cut them julienne.
In a medium to large pot, drop the onions in with two tbsp of oil.
Waiting for the onions to cook on medium to high heat. About 30 minutes, give or take.

Caramelize the onions until they’re a gorgeous amber color. Side note- every time I say gorgeous when I talk about food, I hear Martha Stewart’s pointed voice as it draws out the “r’s”.

Actually my pregnant brain went to cooked worms for a hot second. But don’t go there. Did you already envision it? Is this whole thing ruined? Keep going. It’s worth it in the end.
While the onions are cooking get together your spices. You’ll need:
1Tbsp salt
1/2 tsp sage
1 tsp oregano
1 tsp garlic
1/8 tsp crushed red pepper
1tsp black pepper
Take 1/2-1 Tbsp of vegetable base and 1/2 cup of hot water, mix until well dissolved. Add to onions.
With a blender or emergent blender (The Chef’s favorite kitchen tool), blend everything together until the big lumps are gone. It won’t be perfectly smooth, but get it as smooth as you can. (Or want) Add more seasonings if needed.
I gave up trying to get a picture of the end product by itself. It doesn’t look like anything to write home about. But wait till you taste it!!
We added it over mashed potatoes. You can choose to make vegan mashed potatoes with vegan butter (Earth Balance makes an amazing coconut oil/butter spread) and an unsweetened nut milk of your choice. If your preference is just a vegetarian route, make them regular with cream and butter.
Put that into your vegan pipe and smoke it.
…. I’m just kidding. I don’t condone smoking. Unless it’s in or on a grill. I don’t want to get any letters or emails.

- 2 onions
- 2 Tbsp oil
- 1 Tbsp salt
- 1/2 tsp sage
- 1 tsp oregano
- 1 tsp garlic powder
- 1/8 tsp crushed red pepper

- 1/2-1 Tbsp vegetable base (not stock)
- Cut onions julienne. Add oil and cook over medium to high heat in saucepan. Let cook for 30 minutes or until onions are caramelized to an amber color, stirring occasionally. Add in spices. Mix hot water and vegetable base until dissolved. Add to water. Blend until smooth.
- Serve hot over potatoes, or any desired dish. Enjoy!!
