When I was younger, I read in a book about an amish girl who made cold banana soup. For some reason it sounded incredibly delicious, but I had no idea what the heck I was doing. I did what any 12 year old would do. I sliced up banana and put milk over it with some extra sweetness, probably a spoonful of sugar because I didn’t care back then. Thus started a weird obsession with fruit in milk. Peaches in milk, strawberries in milk, bananas in milk.
As I grew older, I still had those nostalgic cravings. I decided to healthy it up a bit, and added some almonds for protein and help keep me fuller, longer. It’s so easy to make, no cook time, and it’s healthy and gluten free! (also, vegan possible as well) I call this my little pick me up in the morning. When I have fresh strawberries in the fridge, I dream of this stuff! As a mother of a three year old, one on the way, and helping run a business, I rarely get more than a cup of tea in the morning, until, like, lunchtime. When I get a bowl of this stuff, you’ll probably see me doing a happy dance in the corner of the kitchen trying to hide it from the said three year old vulture.
- 3-4 strawberries
- 1/4 cup almonds
- 1 handful of dried cherries (or dried fruit of choice)
- 1/4-1/2 nut milk of choice (I use coconut milk or almond milk)
- 1-2tsp honey
- Wash and slice up strawberries and add to a soup/cereal bowl. Sprinkle almonds and dried cherries. Add milk and honey. Devour!
- To make it vegan, use agave syrup or coconut sugar. Or non at all! I like the added sweetness against the tarter strawberries. Some people might be fine without it though.
If you’re feeling really naughty, you can always add in some dark chocolate chips. Ok, lets be honest. That’s like the healthiest dessert ever and about the opposite of naughty. I’d be proud of myself if I had that for dessert every night.
